Orecchiette are the most iconic pasta shape in PUGLIA and here at SUD we reproduce it exactly how is made in 9D's hometown.
We select the best wheat durum flour from south Italy and mix it ponly with warm water.
Pasta is then store in the fridge for drying slowly keeping all the natural properties of the flour and , once cooked, the aromas of the grain will be released.
The texture is a little chewy making short pasta and long pasta lovers love this unique product.

USAGE
The perfect way to cook it is :
1- mesure 120g/ 150g a person
2- boil the water ( the best is using a BIG POT FROM of 6l of water)
3- once the water reach the boiling point trow a punch of salt
4- drawn the orecchiette in and stir sometimes in order to prevent to stick on the pot or to each other
5- Fresh pasta cooks very fast so Strain it 3min.
6- Strain the pasta direct into your favourite sauce and toss it for a minute. THE BEST IS TOSS IT INTO OUR PASTA SAUCE AND TOP IT WITH OUR GREAT EXTRA VIRGIN OLIVE OIL or follow the traditions of Puglia combine it with a broccoli sauce or stirfried lighlty spicy broccoli or kales. THIS DISH WE CALLED BARI AND IS AVAILABLE IN OUR GEOMENU!
STORAGE
Our packaging is a family size pack ideal for 5people.
Our pasta is freshly made and the best way to preserve it is to keep it in the fridge for 1 week or in the freezer for a month.
